Happy National Donut Day!

Whether you spell it doughnut or donut, it is time for one of the happiest days of the year- National Donut Day! 




You know that I could not let this day pass without trying another donut recipe and sharing it with you.  With summer on the horizon I am really craving lemon.  That and lime are flavors that just taste like summer to me.  It seems only natural that I would seek out some recipes for lemon donuts to commemorate the occasion. 

I pieced together some recipes that looked good and went for it, making my own changes here and there. I used a mini donut maker, but I am sure that you could also bake these in a donut pan. 


Frosted Mini Lemon Donuts 

Donuts: 
1 3/4 cup flour (I sifted, but that is optional)
1/4 cup cornstarch
3/4 cup sugar
2 tsp baking powder
3/4 cup buttermilk*
2 eggs
2 Tbsp melted butter
1 Tbsp vanilla
2- 3 tsp lemon zest  

Frosting:
1 Tbsp melted butter
2 tsp lemon juice
1 tsp lemon zest
1 1/2 cup powdered sugar
1-2 Tbsp milk (I used skim)
Sprinkles (optional, but why not?) 

  1. Preheat donut maker according to instructions.  Spray lightly with a non-stick baking spray (I used Pam).
  2. Whisk the flour and cornstarch together in a large bowl. In a separate bowl,  mix the remaining ingredients until just blended (be sure that the butter is not hot when added). 
  3. Place the mixed batter in a icing bag and cut off the tip (you can also use a gallon plastic bag with a corner clipped).  Fill the individual donut spaces and close the lid.  
  4. Bake for about 3 1/2 to 5 minutes until light brown in color.  Using a fork (there may be one provided with your donut maker) remove the donuts and cool. 
  5. To make the frosting, combine the butter, lemon juice, lemon zest and powdered sugar. Stir.  Add 1 tablespoon milk and stir again.  Slowly add the second tablespoon of milk until desired consistency is reached. Once the donuts are cooled dip each donut in the frosting or ice with an offset spatula. Add sprinkles if desired. 
* If you do not have buttermilk, add 1 tspn white distilled vinegar to 1 cup milk.  Let sour for five minutes.
