Old Bay Pumpkin Seeds- Yum!
Millions of people will be carving their Jack-O-Lanterns tonight in preparation for the big day. Here in the south we have to wait until the last minute to carve our pumpkins so they won't go bad before Tricks or Treats. Jim carved ours last night and I decided to make a special treat out of the seeds he scooped out.
We love Old Bay seasoning around here and will use it to season just about anything. (Have you ever had it on potato chips- it is the BEST!). Here is my version of the recipes floating around the internet. (And no- I don't have any monetary interest in Old Bay- I live near the coast and it is a staple in our pantries!)

OLD BAY ROASTED PUMPKIN SEEDS
1 1/2 cups to 2 cups fresh pumpkin seeds
2 teaspoons olive oil
1 Tablespoon Old Bay Seasoning
1 teaspoon kosher salt
Preheat oven to 375 degrees. Thoroughly rinse seeds and remove extra pulp. I usually rinse two or three times in order to get them "clean". Pat dry. In a medium sized bowl mix the pumpkin seeds and the olive oil, thoroughly coating the seeds. Sprinkle in the Old Bay and the kosher salt and mix thoroughly. I have also mixed the spice and salt with the seeds and oil in a gallon sized plastic bag- that works well, too).
Place seeds on a parchment covered cookie sheet and bake for 5 minutes. Stir and bake for another five minutes. Repeat the pattern, if necessary, until the pumpkin seeds are crispy and very lightly browned. Cool and ENJOY!
These are perfect for sitting around and watching Halloween specials on TV. "Hocus Pocus" anyone?
