Delicious Ghostly Brownie Bites
If you need a quick, last minute delicious little goody for your favorite Trick-or-Treater, then have I got a "recipe" for you! These little ghosts are actually brownies, covered with chocolate frosting and then a layer of marshmallow fondant. They are spooktacular!
I started with a Devil's Food (of course) brownie mix (I'm not too proud to use a mix during these busy holidays!)
I used this silicone Wilton Brownie Pop pan. I think I got it at Michael's a couple of years ago, but you can get it at other cake supply stores as well (I think I saw it at Walmart and of course, Amazon, too). Don't worry, there are several cute things you can use this pan for!
Lightly spray the pan with a baking spray (I used Pam) and fill the individual cups 2/3 full of your brownie mixture and bake for about 20-25 minutes at 350. Let them cool for 10 minutes and pop the brownies out by manipulating the pan around. You can also push the brownies out at the top but you may get a little dent at the top of your "ghost".
Once the brownies have fully cooled, cover with chocolate frosting (Yep, you guessed it- I used canned!). Be sure to smooth your frosting so that your ghost does not have lumps. Cover with marshmallow fondant (recipe below). I used little pieces of black fondant for the eyes and mouth, but if I had them, I would have used mini chocolate chips instead.

Marshmallow Fondant
1 cup miniature marshmallows
1 TBSPN water
1-2 cups powdered sugar
Melt marshmallows with the water in the microwave for thirty seconds. Stir. If not completely melted, microwave again for ten seconds and stir, repeating until the marshmallows are melted. Stir in 1/2 cup of the powdered sugar (I prefer to sift mine first, but it is not necessary). Add sugar by the 1/2 cup, stirring after each addition, until the fondant is no longer sticky. Roll out the fondant to about a 1/8 inch thickness on parchment paper covered with a little bit of powdered sugar to prevent sticking.
Cut about a 5 inch square of fondant (I use a pizza cutter for this) and drape over the frosting covered brownie. Trim the excess off of the bottom edge. Add eyes and nose. The finished bites are about 2 inches tall. Perfect bite size treat!
I have to admit, I came up with this idea and thought it would be cute. Which it is, but I really did not realize how good they would be! The little ghosts are the perfect combination of layers of chocolate and marshmallows. Yum!
