We are excited to cheer on our alma mater - James Madison University to a FCS Championship today! What better way than with cupcakes!
My husband and I went to James Madison University for our undergraduate studies. Today they are playing for their second (in a row!) FCS championship. We are snowed in (still!) and I wanted a quick fun treat to enjoy while watching the game. I was inspired by the purple and gold color scheme to make a lemon cupcake with a lemon frosting- the frosting is even gluten free!
A few years ago, a friend of mine asked me to make some gluten free lemon cupcakes for her daughter. I have to admit that I am a little confused by the types of flour, etc. that are necessary for a gluten free anything, but I found a mix and a recipe for this awesome lemon frosting. The cake mix, by Better Crocker, is good, but a little dense for my taste, but I love this frosting. I based my recipe on the one posted on the Betty Crocker website here, but I added a little bit more lemon to enhance the flavor. (I am not in any way affiliated with Betty Crocker, FYI).
Mix powdered sugar, butter and 1 tablespoon of lemon juice with an electric mixer on low speed until combined. Add remaining lemon juice, until creamy and smooth. Beat in lemon peel. If desired add food coloring. Frost your favorite cupcakes.
I found that this frosting will only cover about six -twelve cupcakes depending on how generous you are with the frosting. I have not doubled it myself, but it should work fine if you do.
I added cupcake toppers that I made with my Cricut, but you could also add sprinkles in your team colors or whatever makes you happy!

2 teaspoons grated lemon peel (zest) (this is double the original recipe)
2 tablespoons fresh lemon juice (I added 3 and needed 2 more tablespoons of sugar)
